Recipe 1: Pawachi Bhaji (Bread Preparation)

Pawachi bhaji (veggie made from bread)

Serves: 3
Prep. Time: 25 minutes

Ingredients
Pao

Cut into small pieces or blended in a mixie (not very fine)
Brown bread slices

Onions

Thinly sliced
Green Chillies
2 to 3
Diced vertically
Curry leaves (kadi patta)
10 to 12

Mustard Seeds (rai)
1 tbspn

Turmeric powder (haldi)
1 tbpsn

Sugar
1 tbspn

Oil
3 tbspn

Salt
To taste


Garnish
Coriander
Few twigs
Thinly chopped

Method
1.    Cut the bread in smaller pieces (or you can just put them in a mixie)
2.    Put some oil in a kadhai and put mustard seeds, green chillies, curry leaves for 2 minutes
3.    Add the onions and sauté it for a while till the onions turn translucent
4.    Add turmeric, salt and sugar to the kadai and stir for some more time
5.    Once when the entire mixture turns yellow (at this moment, taste a little to check for salt or spice; its easy to modify the taste at the stage)
6.    Add the bread (either pieces or blended) and keep stirring, till such time the bread soaks the flavor and colour (its worth tasting ur dish once more)
7.    Put off the flame & garninsh this with some coriander
8.    Serve hot

Note: You can use any bread of the following breads for the preparation – local bakery pao, white bread, brown bread. This dish can also made by left-over chapattis. You can also mix any or all types of breads
Coriander is a great garnish and has a unique rusty flavor. It can be used as garnish for most of the Indian preparations.

A simple deliciously tasty preparation. Takes very little time and is very easy to make.

We call this pavacha upma :) Tastes better with the pav bhaji wala pao and better with white bread than brown!

Yeah, its supposed to be done with bakery pao.. since i had some brown breads lying around thought of adding them (by blending in a mixie) too
